Overview

Function (Scope and Main Purpose of Job)

Daily oversight of the food & beverage operations and staff.  Ensures compliance with policies and procedures.  Ensures guest service standards are adhered to by staff.

CLEAN: Must make the property shine and look impeccable while maintaining a neat CLEAN and crisp personal appearance.

 

SAFE: Must make guests feel SAFE and comfortable through creating a worry free, carefree experience.

 

Fast: Provide FAST and efficient service with accuracy. Meet service time requirements and anticipate guest needs.

 

FRIENDLY: Greet each guest with FRIENDLY welcomes, making eye contact and smiling. Use H.E.A.R.T. steps to ease guest concerns. Say thank you to departing guests.

 

FUN: Work passionately as a team to create a FUN experience both for everyone who works and plays here.

                        

Specific Responsibilities and Duties

a.      Adhere to, implement and follow all policies of the department and company

b.      Supervises and assists in daily training of managers and hourly employees and maintains open communication between all personnel working in department

c.       Maintains appropriate beverage/food inventories and quality control with the service of alcohol

d.      Ensures quality control and timeliness of beverage/food service.  Assists in controlling labor/beverage/food cost for department.  Knowledge of safety procedures to ensure employee and guest safety

e.      Understands all PLCB regulations and ensures compliance of all applicable liquor laws for the department

f.        Ensures compliance with all federal and state gaming regulations

g.       Achieves budgeted revenues, control expenses and labor costs, and maximize profitability within all areas of food & beverage outlets

h.      Maintains company operating standards.  Demonstrates professionalism that reflects our brand and company values

i.        Responds to guest trends, needs, issues, comments and problems to ensure a quality experience and enhance future sales prospects

Create, recommend and implement promotions and ideas to capture more in-house guests and a larger share of local market. Ability to extend complimentaries in accordance with the property comp matrix. Other duties as assigned

Qualifications

Job Requirements (skills, knowledge, and abilities) 

a.      Ability to analyze and interpret restaurant operation results.

b.      Ability to solve complex problems.

c.       Ability to perform assigned duties under pressures.

d.      Knowledge of sanitation laws and health regulations and applicable OSHA regulation.

e.      A variety of task and deadlines requires irregular work schedule.

f.        Ability to perform assigned duties in an interruptive environment.

g.       Accuracy in completing assigned duties in a timely manner.

 

Educational Requirements

a.      Preferred, five (5) to seven (7) years of experience in restaurant management and supervision in a fine dining facility.

b.      High school diploma or equivalent required; some college preferred.

c.       Must be Serv-Safe and RAMP certified.

d.      Must have full working knowledge of POS.

e.      Must have knowledge of approved Responsible Gaming Program.

f.        Mathematical skills, including basic math, budgeting, profit/loss concepts, percentages, and variances are utilized frequently.

g.       Must be able to obtain and maintain a valid gaming license as determined by the PA State Lottery and Gaming Commission for the position.

 

Physical Requirements

a.      Ability to work long hours.

b.      Ability to stand for long periods of times without sitting or leaning.

c.       Ability to climb stairs multiple times daily.

d.      Ability to handle multi-tasking-heavy work-exerting up to 50 pounds of force occasionally, and up to 30 pounds of force frequently or constantly to lift, carry, push, pull, or otherwise move objects.

e.      Ability to climb, bend, stretch, twist or reach with your body and arms.

f.        Ability to work under variable temperatures and noise levels.

 

Working Conditions

a.      24/7 high energy casino with over 100,000 sq. ft of gaming and entertainment space and approximately 500 employees.

b.      Exposed to alcohol, cigarette and cigar smoke, bright lights, and loud noises.

c.       You will work in an environment where smoking is allowed.

d.      Required to work nights, weekends, and/or holidays.

e.      Handling, carrying or lifting items weighing up to 50 pounds.
